Anyone know if its feasible to make a 2 feet long or so pinpointed probe with a narrow shaft (1/2-3/4" thick) for drilling holes with a 1" wide auger and probing for metal detection?
Sure! Check out yard sales & thrift stores for augerbits used in a brace. We made one when we were kids. Grandpa braised it up for us. Worked fairly good. Imagine the trouble we could've gotten into if cordless drills were around back then.

Remember, with a big enough junk pile you can fabricate anything!!!
