Ya know, it gets hard to cook for one; to please ME.
Tonight it is the usual once a month pot of chili, some home-made potato salad on the side, sliced cukes and iced tea.
I did pick up some filet Mignons and will wrap them in bacon for the grill tommorow or Sunday....

Man, ya gotta be able to think outside the box and come up with something new and original now and again!

    Re: What's For Dinner?

What ever is in the fridge.

    And, that's a smorgasbord tonite.

Since the wife broke her foot, the kin folks have been bringing food every day and my fridge is so full I can't find room to cool my beer. I had to go out and buy ice and cool it in an ice chest.

I've got chicken spaghetti, green bean casserole, squash casserole, chicken salad, home made pimento cheese, home made mac and cheese, rotisserie chicken and corn bread. Not to mention a large bag of fresh tomatoes and four containers of fruit for the girls. OMG.

I'm in hog heaven right now.

I was told today, they are going to start bringing more Monday.

When this foot heals, I'm breaking the other one.

Got macaroni and cheese a going in the crock pot.
Went down town and had two beers and visited with with the friends.
Came back and fried some frozen haddock for a fish sandwich.
    Yeah, life is great.

    Friend,
    I feel your "pain."
Cooking for one is hard...there's always leftovers!
The secret is to have a balance of something "new" to go along with the something "old!"

    PS.
Do not forget the rules of leftovers:

#1)Do not eat anything that is fuzzy
#2)Do not eat anything that has rainbow colors
    #3)Microwaves do not kill botulism
Have I forgotten any other rules?

This is the reason I started this thread...
Carol used to ask me every time we saw each other or talked, "What's For Dinner."
She passed about 2 1/2 years ago.
    I miss Carol....
