PS: Baking time may vary a bit. You can use a toothpic to do a test. Stick the toothpic as far as you can into the middle of the loaf and remove it. If the bread still appears to be wet and/or sticky, just bake it a little longer.

Sometimes I'll toss in some shredded Taco cheese, sometimes shredded cheddar, but I'm still playing with the whole cheese thing because I just can't get that right mix so the cheese flavor is noticeable along with the jalapeno?

Peachy, you can play with the sugar to make it sweeter, maybe add a bit more flour for a little drier bread. I really like to take a slice, brown it in a toaster over, add a little butter and maybe some sour cream, maybe a few slices of crispy bacon and/or some egg, just depend son my mood. Yummy! You can use the base recipe to make whatever you want......dried basil, rosemary, etc. Really an easy base.

I remember reading a book about an old timer in alaska. He still used his sourdough starter that his father was using during the klondike gold rush,over 100 years old. sourdough is excellent too Don Jose

We make our own James. Sometimes if we are in a hurry and we have neglected the last batch, we help it along a bit with standard dried yeast for the starter. In fact, standard dried yeast will make a fine sour dough. If I am in camp for more than a few days, I always carry a packet of dried yeast for this purpose.
We love SF fresh baked, sour dough bread, drooling with real butter and honey. although many times we just garf it down, straight and hot.
For a while I made a spread with the soy milk residue, every one loved it. However I don't make soy milk any more.
