Armadillo Chilli Recipe

Armadillo Chili Recipe

Recipe serves:
Armadillo Chili Ingredients:


1/2 lb Bacon, finely chopped
2 tb Vegetable oil
3 lb Armadillo
2 lg Yellow onions, peeled and
-chopped
8 lg Garlic cloves, chopped
1/3 c Chili powder
3 tb Ground cumin
1 1/2 tb Dried Mexican oregano
1 ts Cayenne pepper
1 3 oz can green chilis
6 c Chicken stock
Salt to taste
2 Or 3 Tablespoons yellow
-cormeal (OPTIONAL) as
-thickener

Armadillo Chili Instructions:

In 5 quart 1Dutch oven, combine bacon and oil.
Cook until bacon has rendered its fat, add meat, cook about 25 minutes on medium heat (stirring).
Add onions, garlic, chili powder, cumin, oregano, cayenne pepper, and chilis.
Bring to a boil and add chicken stock.
Lower heat and simmer for 1 1/2 to 2 hours.
Add salt, if needed.
If chili is to thick, add some water.
If its too thick, add the cornmeal (your call).
Cook for an additional 30 to 45 minutes.

For a variation to all of the above recipes add:
Cumin to your taste

3-4 Chili Ancho Pods, split open, remove seeds and devein. place oil in fry pan cook a few seconds on each side, soak in hot water a few minutes, place into blender till thoroughly smooth. Add to pot and cook about 10 more minutes.

Or you can use; El Paso Canned Enchilada Sauce, hot, mild or medium to your taste.

Did someone say, "Great chili?".....hehehe......just so happens I know a thing or two about making great chili.....did this same experiment in my own kitchen one weekend, even had the fire department and the bomb squad on 48hr standby.

Thanks to all that entered. Only had 5 entries and 3 that qualified for the contest - #1-TreasureTales, #2-Buscadero & #3-BudP. It'll be a week before the house stops smelling like chili.. been cooking it for the past two days. I have enough chili in the freezer to last until winter...LOL

They were all very good recipes...they are all winners and they all tasted excellent.

It was the hardest thing I have ever had to do because I'm one of those cooks that likes to add a little this & that, never really follow a recipe to the tee, but I had to this time and it drove me crazy....

Anyway, filled three bowls with the different chili's and sat Civilman down for the tastin' . Took him quite a while to finally make up his mind....kept going back and forth....Finally he made his decision....


#2-BUSCADERO is the WINNER.......


Now with that said, I feel sorry for the guys that Civilman has to work with tomorrow.. ....Thanks to all for submitting your recipes. Happy Cookin'
