What other words can I use instead of Metal Detecting

Merely using the word "Hunting" is too vague in my opinion. One club name I've seen includes the words "Research and Recovery" in their name. You might try that on for size.

Is there a particular reason you don't want to use "Metal Detecting" in your name?

Well Africa, it all depends on what type of image you're trying to project with your group. You then can maybe come up with some "buzz words" for the group name.
