It would be South to North respectively, since the true dip needle Dave just posted would always be pointed magnetic north that would be the only way. Also, I have the pipe finder dip needle in the second photo and it works real good if you point it north just as the arrow says in the lid "Point North" and you use the same dipper sideways as a compass for finding north.
