They make good jelly, & Texas ranchers sometimes burn the spines off to feed their cattle in droughts.

Barrel cactus are also edible too... used as a water source in hot desert conditions...

One of the more dangerous armed or spines cactus...jammed a spine into the end of my thumb...not fun

When I lived in CA my friends mother (who is Mexican) used to make the most delicious Salsa from the pads. Hey Produce Guy, I spent 6 weeks working on a film in Manor, TX. We renamed it Endora for the film. I spent a lot of time up on the water tower.

Funny thing. I looked at the map of where they are found and there were 2 places in the US they didn't have them. One was Alaska, the other was Washington DC. There just HAS to be some prickly pears in DC. ;D

Anybody that wants to try them, don't try to buy the pads and prepare them, just check the hispanic section in the grocery store and buy a jar of nopalitos, which is already sliced up and ready to go. Maria cooks them up sometimes with tomatoes and onions, or uses them straight in salsa. They don't have a whole lot of flavor to me. In the tourist places in the southwest you can find prickly pear jelly and candy.

Yeah Fossis, she ran a restaurant in Mexico for 12 years before comin up here. She get's up every mornin before goin to work and cooks up more than I used to cook up in a week.
