Killer Tomatoes....They're taking over.

Well, the squash is petering out and here come the tomatoes. Here's a look at what we've got going on from the garden. My husband (civilman1) picked all this last night. I've been trying to keep up with his picking...there is a lot in the freezer and this is what I've been able to can so far. Now onto salsa, sauce and stewed tomato :hello2:....it's a chore for sure but I love it :) Thanks for looking.

Lucky, lucky you for all those great veggies. Around here we are having a major drought. A lot of my plants are dead or drying up. Lucky you.

Hey Beth,
I slice, blanch & freeze them if I have enough to store.

Cooking:
I stuff them like peppers or large zuch's. Preheat oven to 350. Put the whole patty pan in the oven on a rack on a shallow cooking pan, put water in the pan. Bake 350 for 15 minutes. Take them out of the oven and let them cool. Cut a round circle where the stem is and take a large spoon and make a bowl, taking out all the seeds. Stuff them with whatever you like. You can either freeze them like that to cook later, or cook on 350 for about 35 minutes.

Thanks - I will have a few from my friends garden - we trade squash every year (he grows patty pan, hubbart and butternut, I plant zuchinni, yellow, and some pumpkins, so we trade).

I'm going to have to try that recipe. The last patty pans I did (last year), seemed to get soggy - not sure why - I blanched and froze - though I'm thinking I might not have let them dry enough before I froze them. (I know my yellows are touchy about that).

I'm definitely going to try the cooking/stuffing/freezing thing this year - it works with stuffed peppers - but never did it with squash. :thumbsup:
