Actually RC, this guy..lenghtwise (almost long as the garbage bag I froze him in!) ...figure about 12-14 lbs. (guessing). Female the same lenght would of been more. Now, gotta smoke a big Lake Trout (in freezer) next wk end! ;)

That's a big trout! I take it you brine before smoking? What kind of wood and how long? We caught a bunch of ocean bottom fish yesterday at Ft Bragg but doubt if we will smoke any. Will have fish tacos tonight for sure!! :)

*Drool.* My favorite.

Of course, when it comes to food it's all my favorite, but fish still hot from the smoker is way up there. I'm looking forward to that lake trout...I mean, I imagine you're looking forward to that lake trout. :D

Nice fish!
Ummmmm
I smoke 75% of the salmon I catch. Alder wood.
Steelhead? no grill it with Portuguese marinade and lots of garlic.
I hope you are going back...catch a few more!

Hey, nice one there TJE. Hey, just wondering why you say it's best to not gut them before freezing?

Actually PB, no brine...just regular salted with salt, seasoning and onion flakes. First batch of wood is maple & oak...then last two are straight maple and cherrywood for sweet flavor.;) Brines I use for deer and moose jerky! ;)

Hey J70, they stay fresh when froze solid...when thawed and preped it's like they just come from the water...plus freezer life (a year or more), plus no freezerburn! ;)
