Filleted and the mud vein/dark areas trimmed off they make respectable table fare. I've shared a couple grilled whole , a S.E. Asia type deal I would not recommend to beginners.

Or , carp are fun to catch and turn loose too.

Used to fish them summer nights. Good times...

My daughter caught a 25 pounder once a long time ago and made the centerfold of a fishing magazine! When it first breached the surface at the dam (can't fish there now), the tourists first thought it was an Oh My God! No, just a fish.

For a big carp, he's the scoop on preparing it. The scales are BIG. So, lay the beast outside on the ground. (You may need help.) Have someone step on the tail and take a garden hoe and scale it using the hoe. I kid you not. Takes all the work out of it. For the little guys, its not necessary but still pretty easy.

After it is scaled, take a sharp knife and run it vertically at the back of the gill plate, top to bottom, then at the base of the tail, cut another vertical line. Then go along the top of the fish horizontally all the way from the first vertical cut to the tail cut. Do this on both sides. Then take a pair of pliers and pull off the skin.

Then go ahead and filet it like a "normal" fish. Takes most of the work out of it. Good fried with any variety of spices. It was a sweet flavor, but you'll still get some small bones to contend with.

This is not a joke post. If it was I would have had you nail it to a maple board in the beginning, and at the end, throw away the fish and eat the board. That is a VERY old carp joke around here.
