The only place I know about in Utah is U-Dig fossils. You can find more info about it at:

It is a fee digging place which has an abundance of trilobite fossils.

There is also the Cisco/Yellow Cat area in Southeast Utah. It is a good area to find a variety of agate, jasper and petrified wood. Here is a pic of the collection areas from a magazine.
