Check out the Sanborn insurace site. They have insurance maps dateing way back.

You might try contacting the Texas Historical Foundation. If they don't have what you are looking for they may be able to point you in the right direction. Good Luck!

Have you tried http://www.davidrumsey.com, too? It's going to be difficult going back to early 1800's... There's an 1844 that prominently features the Bexar area on David's site, if that's early enough for you. No detailed local-area maps are going to be around for most of Texas that early in the 19th century.
