try this

6 red potatoes dices (do not peel)
3/4 pound cubed steak
1/2 lb corn
1/2 lb peas
1/2 lb diced tomatoes (season with 1tsb Italian seasoning)
1/2 lb diced or baby carrots
1 tsb salt
1 tsb black pepper
1 family size can of cream of mushroom soup

Place all vegetables in crock pot first, add seasoning, place meat on top, pour cream of mushroom soup over meat completely covering. Place on low (or automatic if you have the setting) and let cook for 12 hrs, DO NOT ADD ANY WATER OR FLUID, stir after 12 hrs, let stand on low until ready to serve, stirring every 30 min.
NOTE--sliced green bell peppers (2) can be added for flavor and color.

Here is a simple one, but one that I really like.

1 Zucchini
2 Yellow Squash
1/2 yellow onion
1 can (14 oz) of diced tomatoes (italian seasoning blend)
1 tiny can (I don't know the ounces) of tomato paste

Slice Zucchini and squash and dice the onion (not too small). Toss in crock pot along with the can of diced tomatoes. Cook for few hours. Drain the "juices" and combine with paste. You might have to add a little water. Add back into the rest of the goodies. Continue to simmer while boiling some penne pasta. When pasta is done, drain and plate. Spoon the zucchini/squash goodness on top. Sprinkle some shredded mozzarella and parmesian cheese on top. Pour a glass of wine and enjoy.
