Soft Beef Tacos For 2!

Ingredients:

6 soft, corn tortillas
1 pound lean ground beef
3 tbsp ground Cumin
6 tbsp olive oil
salt and pepper to taste
1 onion
two ripe tomatoes
1/2 head iceberg lettuce

Fry up your meat and olive oil, breaking it into small pieces as you fry it.
Cook until brown.
Drain all the fat.
Pour 3/4 cup warm water over meat and bring to a boil.
Add ground cumin, salt and pepper to taste.
Cook and stir the mixture until the added water becomes a gravy - thickness to your liking.

Turn that heat down and let simmer.

Steaming tortillas:

Overlap several spoons in the bottom of a medium sauce pan
Add 1/3 inch of water.
Bring to boil.
Cover.
Reduce to simmer.
Set the 3 tortillas on the spoons, just above the boiling water.
Cover and let sit anywhere from 50 seconds to 3 minutes, keep an eye on them.

With a little luck, (or practice!), you now have some soft, warm corn tortillas!

Roll em up!

To make a soft taco...

Lay a tortilla on a plate and spoon 3-4 tablespoons of ground beef into it...

Roll up all 3 tortillas.

Spoon some of the gravy over the finished tacos. Salt.

Heat up 3 more tortillas and repeat.

Finally... top with freshly grated iceburg lettuce and tomatoes.. add onion, to taste.

Sides of..

..grated sharp cheddar, pickled jalapenos, cilantro, guacamole and sour cream might be in order!

No, seriously. I'm printing this up right now to take home to my wife. (Not that I think she has to cook, but that she can cook.) ;D
