Rappie Pie (or "râpé" as we Acadians call it)

Brown a pound of hamburger meat (or "chuck" like some call it) and a chopped onion, and scatter it in the bottom of a casserole dish (feel free to season this with salt, pepper, or whatever floats your boat). On top of this, spread a can of cream corn (or two, however many it takes to get a good 1/4 inch layer) and over this put a layer of mashed potatoes. The fancy cooks out there might want to color it up a bit by sprinkling a bit of cayenne and/or parsley on top of the potatos. Put in oven at about 375 degrees for about a half hour and serve.

This is a very famous dish here in Acadia, quite popular in the "left-over" days when you have left-over mashed potatos from Thanksgiving, for example.
