Shepherd's Pie
1 lb. of lean ground beef 1 cup chopped onion
2 cups frozen green beans 1 cup frozen corn niblets
1 cup frozen peas 1 cup frozen sliced carrots
1 (14.5 0z.) diced tomatoes 1 (12 0z.)jar beef gravy
1 tsp.dried thyme leaves 1/2 tsp. salt
1/2 tsp. black pepper 24 oz. instant mashed potatoes
Heat oven to 375 F. Spray 3 quart casserole dish with non-stick cooking spray.
In 12" skillet brown beef and onion. Drain. Add beans,corn,peas,carrots,tomatoes,
gravy,thyme,salt and pepper.cook until heated thoroughly. Spoon into casserole
dish. Spread mahed potatoes evenly on top. Bake 30-35 minutes until bubbly.
Broil 3-5 minutes until potatoes brown. Shredded cheese can also be added on top.
