I dug this wheat cent last week, and upon cleaning I noticed a missing last digit. It is not rubbed off or scratched off or worn off...there is no evidence of a last digit ever being there. I suspect it is from grease in the die when struck. Has anyone ever seen a coin like this? Are there other examples of this?

You are correct that that the coin was struck through grease on the last digit in the Date! I have literally seen thousands of coins similar to your's and I am sure that we all will see thousands more.
