The 8.5 x 11 goes a bit deeper than the 5 x 8. A good rule of thumb is a coils magnetic field goes approx as deep as it's diameter. But once you get so big you will have a hard time picking up on small targets. The other big factors involved is what quality the detector is to use that information and of coarse how well the user interprets the info the detector is displaying. Smaller coils are great in trashy areas and will help you pick through the junk.

Right on target. Larger coil - more depth. Smaller coil - more separation.
 

Large coil deep. Small coil shallow. Concentric coil deeper than dd but cant handle thick trash too good. DD coil shallower than concentric but handles crap good. Concentric has concentrated sweet spot at dead center and id's and pp's better. DD sweet spot is long and thin, spread out along the axis between the t and r coils, so is a bit tricky to pp and id. Theoretically speaking.
