3 or 4 small apples, cored and cut into small chunks
1 or 2 medium size carrots, grated into large slivers
1/2 to 1 cup of raisins
2 or 3 heaping tablespoons of mayo
a splash of milk
Add the carrots, apples and raisins to a bowl. In a seperate cup, throw in the mayo and splash a little milk on it, stirring until it gets to the consistency of a sauce or gravy. Spoon it into the fruit mixture, stirring it all up together until everything is coated.
This fast dish was one of my favorites growing up, and still is today. Its plenty sweet by itself, but if the kids poo-poo it, throw a dash or two of sugar into the sauce before stirring it into the fruit to sweeten it up some.
Really great on hot summer nights!
