Garlic, Chicken Livers & Onions

This is our Saturday lunch during winters when accompanied with several slices of fresh San Francisco sour dough bread and salted butter...

My favorite because the livers are mild and are complimented with the mushrooms and onions...

4 Garlic cloves, chopped or crushed
1/2 Lb of fresh mushrooms, sliced
1 White onion, chopped
1 Lb of fresh chicken livers - chopped into quarters
2 Tsp Extra virgin olive oil
salt & pepper

For a quick lunch, heat olive oil in a 10 inch skillet...
Sweat the onions and add garlic when onions are transparent...
Add the mushrooms and chicken livers and season to taste...

When livers are fully cooked, plate up and enjoy...

Thanksgiving Turkey's liver didn't make it to the dressing and gravy prep...

Snagged the liver and cooked it as soon as the big bird was placed into the oven...

sounds good! We like to marinade liver and waterchestnuts then wrap them in bacon and do them on the grill. Yum!
