I have this piece of coral thats been in my collection for a while now and I was wondering why it was grey. I know it's not fake because I found it myself in Hawaii. All input will be appreciated.

When coral dies it turns white. It's called "bleaching." I am guessing this coral died and it was then exposed to the elements, ie wind, sand, soil, sunlight, etc.

But I thought dead coral was wite? Or is it not always white?

See my post above. Leave something white out in the elements for a period of time, it will not be white anymore. It's dirty dead coral. If you want to try and get the grey off, try soaking it in a solution of bleach and water. I have done this with a few pieces I have found and it will also kill any critters that may be living inside.
