1/2 Lb. shrimp peeled and de-veined (I use fresh but the flash frozen ones work also, or fresh fish)
1 -8 OZ. package cream cheese
1- pint sour cream
1/2 Tb olive oil
1/2 cup shredded cheddar cheese
1- stick of celery chopped
1 Tb pimento
1/2 Tb oregano
2 tsp paprika
juice of 1/2 lemon
1/4 tsp salt
minced garlic or garlic powder to taste
minced onion or onion powder to taste
cayenne, or any hot pepper to taste
Place shrimp in collander and place on smoker, allow them to smoke until cooked good but not rubbery. Finely chop them or puree' them. Mix with all other ingredients and refrigerate overnight, then serve with favorite crackers, spread on bagels or toast.
