Jake,
that piece would have a very fine screen filling it. Used when cooking. If you were doing bacon it was used so you
would not get hit with any hot grease while cooking. Small doohickeys on the end would balance it on your pan in
two location and handle would also serve that purpose, keeping it on your pan, above food cooking. It blocked the grease, you were using to cook something, from splattering you or the stove.
Think, but not sure, it is called a "splatter guard."
