More Pickled Eggs

Figured I'd take a little time away from sketching and eating the candy my cousin made me and pickle another batch of eggs. My chickens have been putting out more than we can use right away and my son's in-laws chickens have been doing the same so we don't want to waste any. :)
Problem now is waiting for them to be ready but that will give me time to stock up on some brewskies! :)

My Mom used to make hers with Jalapeno's and beet juice for color and onions not sure what else though they were umm umm good.

yeah Jeff, my son's in-laws are preserving some right now with mineral oil. Doesn't work too well on those crumby, store-bought eggs though because they wash the natural, protective coating off before they go to market. The mineral oil will keep them about a year or so, never heard of 2 years with vasoline but it sounds reasonable. My son's in-laws sell eggs at the famer's market and the market hasn't been open for a while, hence the extra eggs. They have many dozens they have been giving away to family.
Too bad we can't harness the energy generated by mixing these eggs and beer. :)
Mama, everyone that likes pickled eggs, likes these. you're welcome to come on by and try some. This batch has peperoncini peppers so, if you want a little bite to them, just add a little tobasco. Also contain onion, peppercorns, garlic, vinegar and dill.
