I learned this recipe at weight watchers and tried it because it's so simple. It is REALLY good if you're on a diet and need something filling to eat. According to ww it is only 1 point per cup and it's full of potatoes.
1 packet country gravy mix (don't buy the cheap kind!)
1 bag frozen O'Brien potatoes (little cubes with green pepper & onion)
4 cups chicken broth
Heat broth and gravy. Add potatoes. Cook till done.
When I made it I got in a hurry and the taters weren't done. It was still good but I recommend simmering about 10-20 minutes. Also might try browning taters n onions next time for more flavor. To give an idea about how low points this is-regular potato soup is 5-10 points per cup.
