cheesy broccoli and cauliflower casserole

4 bags of frozen broccoli or cauliflower in any combination--whatever you like best. I usually go with 3 cauliflower, and one broccoli, as my wife likes cauliflower more.

1 onion, chopped
6-8 slices of bacon, cooked
1 stick of butter
1-2 cups of Heavy cream
16 oz or so of shredded cheese (I usually use cheddar or a mix of colby/jack)

spread 2 bags of the veggies and about 1/2 the onion in the bottom of a large casserole dish. add a layer of cheese--enough to cover the veggies. add pats of butter about every 2 inches all the way across it.

Repeat for a 2nd layer. This time, top it with the bacon. Pour cream over the top, trying to distribute it evenly. It helps add moisture to the dish, and sets up nicely when cooked.

Cook about 1 hour 15 min at 350 degrees.

This dish is made for the Atkins diet. Very low carb, but will give a cardiologist fits for the amount of fat in it. It tastes great.
