After scanning 400 Peter Schmitts (also Schmidt and Schmitz) in the 1880 census, for the western states, I found only one Peter 'Schmidt' who was a baker, a 39 year old from Holstein, Germany living in Napa, California.

This, of course, proves nothing!

Oh well, here's a picture of a steam bakery! :icon_jokercolor:
