Red rolls are based on the condition of copper cents. As they age and oxidize, they can turn a dull brown. Collectors prefer shiny "red" examples. You can have an MS 65 brown OR an MS 65 red coin, it's just coloring, not wear or damage.

more modern proofs have "S" mint marks; the other dead giveaway is a cameo look. Look up cameo coin to see what I mean.
Older proof coins are just extra shiny and detailed, or have cameo. Some of those varieties and differences are very collectible.

ANd yes, I look for coins of numismatic value as well. I search cents and nickels in addition to my dimes and halves.
