I've got a gold dollar, Jefferson 2007-P, that on the edge where it says "UNUM" there appears to be an upside down "U" next to the "U" and up against the "M". Is this a possible error?

This is a common error that occurs when this coin's edge pushed up against the edge of another coin in the edge lettering machine.
