The three lines of 'tic-tac-toe' would show:

Line one: Mintmark, denomination and assayer.
Line two: PLV SVL TRA (Spain's claim to MORE BEYOND the Pillars of Hercules)
Line three: Assayer, year, and mintmark

P represents Potosi
'1' represents the denomination in reales
'96' represents the abbreviated date year of 1693 (edited from '1696')
I agree with your research

Value is tied to demand and demand is tied to many characteristics (condition, weight, rarity and provenance--to name a few). Once those characteristics are defined, an estimate of value can be given.

Detector(s) used
Minelab Explorer SE (land), Aquapulse AQ1B (sea), Fisher CZ-20 (water, beach), Fisher 1266X (woods)
Value of this particular coin on Ebay would probably be around $35 US.
