Yes, I can make some great meatballs!

1) 1 pound ground beef (90/10)
2) 1 cup finely chopped onion
3) 1 egg
4) 1/2 cup Italian-style seasoned bread crumb
5) 1/2 cup grated Parmesan or Romano cheese
6) 1 tablespoon minced fresh Italian parsley
7) 2 medium cloves garlic, peeled and minced
8) 1 teaspoon salt
9) 1/2 tsp dried oregano, crushed
10) 1/2 tsp. basil
11) 1/2 tsp crushed red pepper flakes
12) 1/8 tsp freshly ground black pepper
13) Olive oil for browning your balls in the pan.
14) 1 Quart of your favorite pasta sauce

In a large bowl, mix all ingredients; except olive oil, and sauce. Do not over mix.
Overmixing will break down the fiber of the meat, and your balls will have
a terrible texture.

Roll your balls to the size of golf balls.

Brown them, on all sides, in a large cast iron skillet with the olive oil.

Put your balls in a pot with the sauce and simmer for 30 min.

Serve with your favorite pasta or make heroes. MMMmmm!

P.S If you make heroes...hollow out the bread and toast it then add M/Bs, sauce, and maybe some mozzarella cheese, then toast again. Oh Man, am I makin' myself hungry!
