THREE LAYER COOKIE SQUARES
1 c butter 2 ½ c Sifted flour
1 c sugar 1 c semi-sweet chocolate chips (I use the whole package)
2 egg yolks (unbeaten) 2 egg whites
1 tsp vanilla 2/3 c sugar
1 tsp salt l/2 c (or more) chopped nuts
Cream butter, gradually add sugar and cream well. Blend in egg yolks, vanilla, salt; mixing well. Add flour, blend thoroughly. Press into bottom of lightly greased 15 x 10 x 1 inch jelly roll pan. Bake at 375 degrees for 15-20 minutes until light brown. Sprinkle immediately with chocolate chips. Let stand 5 minutes.
In clean bowl, beat egg whites until soft mounds form. Gradually add sugar, beating well after each addition. Fold in nuts. Spread melted chocolate chips evenly over warm cookie base, then spread meringue over chocolate. Bake at 375 degrees 10-12 minutes until lightly browned. Cool, cut into squares. Makes 3 dozen bars.
