Just posted this on Pinterest so I thought I would post it here as well.It hit the spot last night with a crisp glass of Pinot Grigio.
Asian cold Pasta Salad Made with
3/4 lb. spaghetti cooked in chicken broth/water
1 cup sugar snap peas and diced red bell pepper briefly submerged in chicken broth
1 can sliced water chestnuts
1 to 1 and a half cups cooked chicken breast
Bangkok Padang Peanut Sauce
Dark sesame oil
Sesame seeds and scallions to top
Thin out the peanut sauce with hot chicken broth and sesame oil and pour over salad and chill.
