I just found this recipe,its been MIA. I made this about 5-6 years ago and tore it up, So I will share it with you all. Enjoy!!!!
Olive Oil, as needed
1 garlic clove, cut in half
1 egg, lightly beaten
1/4 cup milk
1/2 cup fresh, soft breadcrumbs
1/2 cup freshly grated parmesan cheese (I used the kind from the shaker)
2 Tablespoons minced fresh parsley leaves or (2 teaspoons dried parsley leaves)
1 1/2 teaspoons dried oregano leaves
3/4 teaspoon salt
1/2 teaspoon pepper
4 catfish filets
Use olive oil to lightly oil or grease a baking pan/dish. Rub the cut side of garlic into oiled pan/dish. Combine egg and milk in a shallow dish. Combine breadcrumbs, parmesan cheese, and seasonings in a seperate dish. Dip each filet into egg mixture, then roll in cheese mixture to coat completely. Put filets on prepared pan, drizzle a small amount of olive oil on each filet. bake at 400*F for 20 minutes or until fish flakes easily when tested with a fork.
