Mix left-over mashed potatos with some chopped onions, salt, pepper, and cheddar cheese. Shape in little mounds, then with a spoon form a hollow in the middle. Break open an egg for each mound and pour it in. Sprinkle more cheddar cheese over these and bake at 425 for about 40 minutes.
