...it's kind of a bar of cornmeal mush mixed with some lard, with some pepper spiced meat inside it, steamed inside the husk to hold it together 'til it cooks and gets firm.

Great while hot, but we eat 'em cold on a lunch break too... No, we don't eat the husks!

The ones I had in old Mexico were lightly seasoned and not hot. I ate them till I was sick. I don't care for the Hot spicy ones in the US.
