I found this knife today at a 1700s-1800s plantation house site. Can anyone tell me how old this is?

I think I see some text on it in the second photo? Might need a bit more cleaning to read... Maybe an advertising knife?
What are the side plates made out of? -it's hard to tell in the photos.

No writing. I believe the sides are made out of brass or copper.

Multiple blades like that I would guess 1895 or later. Insufficient data.
