Marinated Coleslaw

1 cup Apple Cider Vinegar
1 cup Sugar
1/2 tsp Celery Seeds
1 tsp Dry Mustard
1 tsp Salt
3/4 cup Vegetable Oil
1 head Cabbage, julienned
1 Carrot, julienned
1 Bell Pepper, julienned *
1 Onion, julienned *


Mix Cabbage, Bell Pepper, Carrot and Onion in large bowl. Combine vinegar, sugar, celery seeds,
dry mustard, salt and oil in saucepan. Stir this as you bring it to a boil. Pour immediately
over vegetable mixture and toss at several intervals to mix. Chill and serve after it is finished
wilting. Will keep for 3+ weeks refrigerated. Yields approximately 1 gallon.

* I prefer to use red onion and red bell pepper. It is more flavorful and colorful.

This goes very well with fried fish and many other foods.

My Mom used to make this all the time and froze it. Haven't had it in years! Yum!

It was for me too at first. Sort of quick pickling. I hope you like it as much as my family and friends here.
 

Anyone try it along with Fat? He may not be so impressed with it.
