Got up at my usual 5:00 AM this morning and was anxious to get the ribs on the smoker. Took me about an hour and a half to prep everything, seasoning rubbed on and sauce slathered, and start the fire just right and get the smoke going, etc. Now they are on the smoker, with plenty of hickory chips and man oh man does it smell good! Ribs on a holiday are my favorite and I only get to cook them about twice a year. Doctor says if I eat too many my cholesterol level will kill me! But, what a way to go! Smoke 'em real slow for about 5 hours and they get so tender they nearly fall off the bone. In fact the bones even get soft and you can chew out the marrow if you want to. You can bet there won't be any left for tomorrow. By the way, real southern BBQ will only use Pork ribs. I pity those who won't eat pig, it is so juicy and delicious, best in the worls. When they are done I'll slice them up in a big pan, pour on some more BBQ sauce and let them simmer in the warmer until time to eat. Then we pull out the homemade potato salad and baked BBQ beans and perhaps a little green salad and hot rolls, both white and wheat. Get out lots of paper towels to wipe our faces and dig in. Then about dark fifteen we drive down to the river and watch the fireworks. It is there we marvel at the greatness of our wonderful country and the freedom and prosperity we take for granted most of the year. Brings a swelling to the chest and a tear in the eye. Won't someone join me? M
