Roasted Green Beans w/ Peppers & Onions

Roasted Green Beans with Peppers & Onions

1 lb. whole frozen or fresh green beans, ends trimmed 1/2 cup zesty Italian dressing
1 red pepper, cut into thin strips 1 Tbs. olive oil
1 yellow pepper, cut into thin strips 1 Tbs. balsamic vinegar
1 med. onion, cut into thin strips 3/4 cup shredded mozzarella cheese

Preheat oven to 425 degrees. Toss all ingredients together in large roasting pan. Bake 30-40 minutes until vegetables are tender, stirring after 15 minutes. Sprinkle with cheese. Bake an additional 5 minutes.

I altered this one the other day and it was so good.

I increased the Italian dressing to 3/4 cup. Added 3 boneless skinless chicken breasts, tossed all together and roasted together until chicken was done. Turned out really good

I think next time I'm going to thinly cut chicken breasts into strips and serve everything over rice.....yummm
