There's nothing like Spanakopita for a quick lunch, or dinner side dish. Although it's a pain to make there are shortcuts you can take with almost the same taste, spinach balls.
used 2 packages of well thawed shopped spinach (Drain very well!!!)
1/2- 1 lb feta (usually 1/2 pound is enough, but I love feta)
1/2 lb ricotta, or cottage cheese
*** If desired - 1/2 lb cubed Swiss cheese (yeah, I'm a heart attack waiting to happen)
I box of stove top corn bread stuffing
2 Vidalia, or Spanish onions diced
i/4 cup chopped parsley or dried parsley leaves
2 eggs well beaten
1/4 tsp nutmeg
add salt, dry pepper
Now the easy part
Mix everything in a bowl and form into 1-2" balls
place on a cookie sheet and freeze. Once frozen place in a ziplock bag for storage
Heat oven to 350 and bake your desired amount for about 15 mins, or lightly browned
This is way easier than using that phyllo dough
