My family can't wait for the bean soup after the Holidays because they know I'll be using my leftover ham and ham bone to make a big pot of soup.
1 pound dried navy beans
2 (32 oz.) box of chicken stock
1 ham bone **
1 small bay leaf
2 tsps. Salt
1/4 tsp. pepper
2 carrots chopped (about 1 cup)
2 celery stalks, chopped (about 1 cup)
1 large onion, chopped
1 clover garlic, minced
3 cups mashed cook potatoes
Rinse beans in colander. Pick through beans. Put beans in large dutch oven, add cold water to cover beans by 1 inch. Boil uncovered 2 minutes. Remove from heat, cover and let stand 1 hour. Drain water from beans.
Add ham bone and chicken stock. Heat to boiling; reduce heat to simmer. Simmer 1 hour. Stir in carrots, onion, garlic, sat & pepper. Bring back to full boil then reduce heat and cover. Simmer for approx. 1 hour. Remove ham from bone. Stir ham pieces and mashed potatoes into soup and simmer approximately 10 minutes. Hope you like it.
I'll be freezing the remainder, it's a big pot.
