Am I correct in assuming that this is what's leftover from a big piece of chert after chipping away at it to get all the goody from it?

Looks like a northern Florida or a southern Georgia chert. It actually looks like a nice piece but unfortunately I don’t think it’s a core. If it’s a field find it could have been cut in half by the disc. But that’s my take on it maybe someone else might know better.

Fron the ripples on the back, my guess is it was a single chunk knocked off a much larger piece to get rid of the crappy cortex on a peice to be further worked, I'd love to see the piece that this was knocked off of.
Yep. One of the first spalls taken off of a nodule. Quite a few defects and porosity in that spall. Good luck making anything with that.
