Baby Flathead

Just got back from the river. All I caught was three little Channel Cats and this baby Flathead. Tomorrow, they'll be wrapped in bacon, cooking on the grill.

Hush Puppies

INGREDIENTS
2 quarts vegetable oil for frying
3 cups cornmeal
2 teaspoons baking powder
1 1/2 teaspoons salt
1 1/2 cups milk
1/2 cup water
1 egg, beaten
1 small onion, minced
DIRECTIONS
Heat vegetable oil to 365 degrees F (185 degrees C).
In a large mixing bowl, combine corn meal, baking powder, salt, milk, and water. Mix in egg and chopped onion.
Shape the batter into small balls, approximately 1 tablespoon each.
Use a long handled spoon to gently slide the hush puppies into the hot oil. Cook 8 or 10 at a time, until golden brown. Remove from the oil with a slotted spoon, and roll on paper towels to briefly drain. Serve hot.

Thanks Fossis. Shoot JG, You would think from the picture, that I'm the one that can't breath. :-\ Oh, I'm going to cook it tomorrow, so I can make Cyn's hushpuppies, and I think some cold Bud is a good idea. ;) Thanks for the hushpuppy idea PBK, and Dig, I hope your able to get out. It was hot and muggy, the mosquito's were bad, and carrying my load about killed me, but I loved ever minute of it. ???

Thanks Timberwolf. It's a little bigger then I usually keep for eating, but my family was complaining, because I haven't fished much. I'd have you over bud, but my third son's spoon could be used for digging tool, if you know what I mean. :o

Blue cats out of the Mississippi are also good!!!! 1st rule for cats out of the ol mis is no bigger than 2lbs after that they taste funny. ;)

Thanks Ron, yea I imagine they look a little funny at a catfish up there. ;D

Caught it out of the Raccoon River. Tony, I usually don't like to eat Channel Cats over 5 pounds, but even the big Flatheads taste good. I usually only eat them up to about 12 pounds, because if you want to catch 30, 40, or even 50 pounders, you have to let the smaller fish go.
