Coulee/Carcasses Nautical Definition

I'm trying to figure out what the exact definition of these are in terms of nautical charts. Are they simply drops in the soundings? They are often used together, and "carcass" can mean a incendiary ship-borne projectile, but why note it on a chart? Are these documenting the ships that used these in a battle? See the example, they are the blobs-

That's French for "Sunken derelicts".
