My Favorite Summertime Sides For The Grill

This one is equally tasty with Asparagus or Broccolini -

-Trim the cut ends.
-Rinse well and pat dry.
-Toss with a light amount of olive oil.
-Add a dash of garlic salt, to taste.
-Sprinkle with Parmesan cheese.
-Place directly on the grill perpendicular to avoid pieces falling through or I sometimes use one of those square campfire grill baskets that 'sandwich' the product, and allow the handle to hang out. If you do this, be careful of small children or hungry adults that hang out around the grill!
-With the asparagus, the fine leaves will char away or curl and the broccolini the tight buds at the top will char and either open slightly or pop.
-Pull off the grill and enjoy!

Sweet Potatoes or Yams

Take a piece of tin foil approx. 17" long, and fold in half.
Wash and Julienne a medium sweet potato.
Open the tin foil up and place the sweet potato and two tablespoons of butter or olive oil in the crease.
Fold the tinfoil back over evenly, and roll-crimp the edges closed.
Throw it on the grill at low flame/heatand drink a Strongbow hard cider.
When your cider is finished, grab the foil bag with tongs and shake gently. Some of the potatoes will stick, but don't worry - that's o.k.
Flip the bag and drink another Strongbow.
When THAT strongbow is finished, poke a hole in the bag and check on the potatoes.
Pull the bag off the grill, tear a hole in the top and dump onto a server plate and enjoy!
