On a larger scale possibly using square-foot gardening methods?
I’m not talking greenhouse, but inside a normal enclosed room inside a heated building.
Considering plants such as peppers, tomatoes, beans etc, and if pollination is required.
LED lights or HID? Soilless medium, hydroponics or soil?
 

Hydroponic is an interesting way to go. No mess with the soil and you can feed the plants nutrients thru the watering system. Good luck!
 

I grow mostly "salad" items. We have a small grow unit with 8 potting units, and light. Works great for 2 people. More lights & space is required for larger veggies.
 

Not in a building but we are putting up 2 geodomes next week here on our property. Should make a big difference here in this colorado climate.
Oir garden does well in the summertime and most veggies grow great.
 

I grew "herb" in walk in closet in the 70s with grow lights on pully system and walls covered in aluminum foil. They grew pretty good too, never got taller than 4 foot, but I was constantly "pruning" them. No doubt you could do same thing with tomatoes and other vegities.
