1 habanero,1 cup fresh orange juice,4 heads garlic,2 tablespoons oregano,2 teaspoons kosher salt,5 lbs pork shoulder cubed,1 spanish onion finely diced,bananna leaves.......heat oven to 350.mix habanero,oj,garlic,oregano,salt in blender till smooth.add pork and mix till coated,wrap pork mixture in bananna leaves then wrap each leaf pouch in aluminum foil and place on baking dish and roast for 4 hours.allow to cool slightly,remove foil.pork should fall apart and be tender.shred with fork and garnish with cilantro and onion.enjoy with a cold beer and warm tortillas and fresh salsa...........this is the one that got me thinking about a pig roast.........ITS KILLER,ENJOY!!!!!!!!!!!!!!
