I spent many years vacationing then living in the Navarre Pensacola area. They have some of the most beautiful beaches. Never cared for Destin as it was always over crowded, expensive and the people that live there think they own the beach.
For the beach, metal detecting was fine when I was there but its been a few years. One thing to consider, Pensacola is one of the oldest towns in the US. There were a lot of ships in that area as well as a lot of wrecks. Its not uncommon after a storm for things to appear like ship parts and pieces. Most recently someone found a sword.

Also with the gulf and our friends in South America you could find something completely different washed up on shore like cash or drugs.
Apart from the beach and metal detecting, there is a large Fort (Fort Pickens) which is very cool to see and walk around. Also their is the Naval Aviation Museum at Pensacola Naval Air Station which is very cool.

Mostly though its the beach, usually not too crowded, the sand looks like white sugar and water is turquoise most of the time. Also due to a sandbar about 100 yards off shore there are not a ton of shells. Dont get me wrong there are some good finds but its not littered with shell bits and pieces like on the east coast.
I hope this helps and gives you some ideas.
