garden fresh SQUASH & TOMATO quick lunch
I'm not a big Cook because my kids like McDonald's....and the lack of time.
This was my lunch today.
1) hand full of garden string beans, boiling and salted
2) squash sauteed with garlic in canola oil
2) tomatoes blanched, skinned..quartered
...save water...finish sauteing the squash, flip them in oil both sides, when the oil starts to soak in, turn heat down,
spoon the tomatoes into squash, stir then carefully pour water in saute pan. let simmer.
Make bowl full of tortillas chips, pour the squash & tomatoes over the tortillas chips, garnish the mix with fresh string beans, with a sprinkle of shredded cheddar cheese.....
That's it.....
